Nordic Holiday Baking: A Two-Session Masterclass
Step into the warm, aromatic world of traditional Scandinavian baking. During this beginner to intermediate two-session workshop, you will master four classic Nordic treats that have anchored holiday dessert tables for generations. Whether you are honoring your heritage or discovering these delicate pastries for the first time, you will leave with the confidence, recipes, and techniques to bake them perfectly at home.
Session 1: Iron & Ironwork — Krumkake and Rosettes
The first session is all about working with specialized equipment to create light-as-air, show-stopping pastries.
-Krumkake: Learn the art of mixing a rich batter, baking it on a hot decorative iron, and swiftly rolling the piping-hot wafer onto a wooden cone before it crisps into its signature shape.
-Rosettes: You will learn how to properly heat your rosette iron, dip it into a thin batter without submerging it, and fry the pastries until they are shatteringly crisp and golden brown
Session 2: Press & Pocket — Sandbakkles, Hallongrottor and Sprits
Session two shifts to rich, buttery doughs that melt in your mouth, focusing on texture and traditional forming methods.
-Sandbakkles (Sand Tarts): Discover how to handle this notoriously finicky, ultra-buttery dough. You will practice pressing the dough evenly into traditional fluted tins, baking them to a golden brown, and cleanly popping them out of their molds without breaking the delicate shells
-Hallongrottor (Jam Thumbprint Cookies): Master the ultimate almond-tinged shortbread dough. Learn the technique for pressing the perfect center "pocket" without cracking the edges, selecting the best high-quality fruit jams, and baking them to a tender finish.
-Sprits (Spritz Cookies): Master the art of the traditional cookie press to create beautifully shaped, classic Scandinavian treats. Learn how to achieve the perfect dough consistency so it releases flawlessly from the press.
What's Included: All ingredients, recipes, and hands-on instruction!
What to Bring: Sign up with a friend, as we will be baking in partners, and bring a small bakery box to bring home your creations. If you have a krumkake iron, rosette iron and/or a spritz cookie press, please feel free to bring along too.

Barbara Haacke’s love for traditional Norwegian baking was sparked in her childhood kitchen. Raised in a traditional Norwegian home, she learned the craft of cookie-making from her mother using her grandmother’s original kitchen equipment.
When she isn’t preserving history in the kitchen, she is doing so in the community as the Executive Director of the Runestone Museum. Barbara is thrilled to pass down her grandmother’s original recipes in this class, keeping generations of tradition alive and well.
